My Favorite Breakfast Right Now!

Vegetable Scrambler 


I know I made omelets just the other day like this but today I decided to scramble them & add more flavoring. Wow, it is amazing!




1 Tomato
1/2 red onion
3 leaves Kale

Spritz with olive oil & "caramelize" in pan.

2 eggs
3 egg whites

Add to vegetable mixture. Add dash of sea salt, fresh ground pepper, & chili pepper flakes.

Optional: 1/8 cup shredded cheese (try to keep it minimal!)

Unbelievable! I obviously split this up into a few different meals, that would be a lot to eat in one setting!

Highly recommend. Easy. Fast. Delicious.
